Pumpkin Spice Whoopie Pies

Mistakes. We’re all human and make them, but sometimes, they really get the best of you and beat you down. Yesterday was one of those days for me. I just couldn’t get anything right! I’ve been working on a craft for the Blog and I attempted to dye something. I hung it out to dry and when I went to check on it an hour or so later, it was completely white again. The color just didn’t take so, I will have to try again another day.

Then, I decided to make my Pumpkin Spice Whoopie Pies. I grabbed my Wilton Harvest Whoopie Pie Pan and couldn’t wait to get started! The first batch rose too high, so I had to start all over. I tweaked some of the ingredients and all was well. I then began my cream cheese buttercream and it was too soft. I had just about had it! I was so frustrated with everything going wrong, that I decided to take a break and re-group. I really needed that, because when I tried the second time, I nailed it!

So, the moral of this story, is never give up. Sometimes, we just have bad moments or days and that’s totally okay. Take a break, brush it off and try again! Always.

Cookies & Cream Donuts

I can’t get enough of Oreos!!! They are definitely one of my weaknesses when it comes to sweets and I don’t have the willpower to say no to all of their deliciousness. Cookies & Cream Cupcakes

I’m here to confess my love for cookies and cream; It’s kind of an obsession…

Cookies and cream ice cream, Hershey’s bars, milkshakes, cheesecake, you name it; I’ve tried it. Oh, yeah! Fried Oreos. Goodness, I love those too!

But let’s talk cupcakes. It’s no secret that I love cupcakes too. They are so much fun to bake, frost and decorate. The possibilities seem to be endless! I had been thinking of these for a few weeks now and finally found the time to give them a go.

Can I just tell you how yummy they are? They have an Oreo at the bottom, Oreos in the batter and are topped with a yummy cream cheese frosting and of course, Oreo cookie crumbs. The best!!!

It’s a cookie overload and you have to make these!

Fresh Strawberry Zevia Cupcakes

My good friend over at Young at Heart Mommy told me about Zevia a few weeks ago. So, I decided to give it a try and I was amazed at how great it tasted. We are loyal Whole Foods shoppers so I was excited when I found it on one of my most recent shops. I purchased a few 6 packs and decided to see what our friends thought at Bunbun’s Birthday Party. Since then, I have only been drinking Zevia when I am craving those crisp, refreshing bubbles of carbonation. What makes it even better is that it is GMO free, clear of any coloring, all natural, zero calories, no artificial sweeteners, and the best one….NO SUGAR! Which means I don’t have to say no when Bunbun or my little guy ask for some. Total Win!

Watermelon Kiwi Popsicles

Happy Popsicle Week!!!  I am super late with this post but we have been enjoying my grandmother visiting us. We wrapped up an amazing Birthday week for Bunbun, filled with lots of fun in the sun and swimming in the pool.

One of the ways we keep cool on our hot summer days here in South Florida is by eating watermelon. It’s a cool snack, packed with water to keep us hydrated and the kids love it!

Star Spangled Apple Pie Cake

Every year, a few days before July 4th, the neighbors line their front yards with American Flags. We invite friends over, cook out back, the kids swim in the pool and we light and watch the fireworks above. It’s always a great day! And for me, a beautiful reminder of my Grandfather. He passed on when I was a little girl, but I will never forget how much he loved this country and July 4th was his favorite holiday. I think Christmas was a close second though…

I’ll always remember the block parties, the sound of country music, the taste of the iced tea and the delightful smell of fresh baked apple pie. Oh gosh, those days were the best! Especially when they were spent on the lake with the boats, jetski’s and fishing poles. The days were warm and the nights were long. Those were some of the best days of my childhood.

Wonton Cannoli Cups

My obsession with cannoli filling is something fierce! We can’t even go to an Italian restaurant without ordering them. And for some reason, I think the kids may actually love them more than us. Sure, Publix sells them pre-made. It’s just not the same! It took years for me to finally find a place that makes them the way I remember them tasting as a child. Oh Gosh! Just thinking about them makes me salivate. I literally licked the bowl on this one…

Strawberry Glazed Donuts

Oh how I just love summer. Relaxing, crafting, spending time with my kids and….Strawberries! They bring back such fond memories of my childhood. I remember when I was a little girl, my grandparents would take me out to the strawberry fields every year and we would pick fresh strawberries. I remember putting them in my little green basket and how sweet they tasted. Just perfect! Theres nothing like fresh strawberries in the summer to keep you feeling refreshed.
